ModeratorCrockpot cooking is helpful for families staying in motels/hotels. Making sure they have essential tools, like a can opener, utility knife, crockpot, goes a long way in the ability to make healthy meals. One recipe that is delicious and nutritious is:
Chicken Provencal
1 lb. boneless skinless chicken breast seasoned with salt, pepper, garlic
3 cans petite diced tomatoes
3 cans northern beans drained
1 carton of chicken broth
Diced red, orange, and/or yellow peppersPut all ingredients in a crockpot and cook on low for 6-8 hours
Shred the chicken and serve topped with shredded cheese.
If you are sharing this with a family that may not have the essentials on hand, make sure to include utensils, bowls, and napkins as well!
